Avocado, Mozzarella & Tomato Salad

A simple salad with fresh mozzarella, avocado, and grape tomatoes tossed with olive oil and lemon juice.

This salad is refreshing and filling, it’s very similar to a Caprese salad but without the basil, and balsamic vinegar. A couple of years ago, my sister in law made this salad for dinner at her house and I was hooked! It is a perfect salad to make for Easter Sunday this weekend.

My favorite ingredient is the fresh mozzarella, it is a semi-soft cheese that adds the perfect texture to this salad; it will not taste the same with regular mozzarella. You can buy the fresh mozzarella in most grocery stores in the specialty cheese section or, although I have never attempted, you can make it yourself.

First, cube the mozzarella and avocados. Then slice each grape tomato in half. Chop the green onion, dill, and parsley and juice half of a lemon. I just squeezed my lemon to remove the juice.

Place all of the ingredients listed in the recipe in a medium bowl.

Gently, mix the salad to combine the ingredients. Try not over mix or the avocado will turn to mush and you will have a mozzarella guacamole ;).

Since this salad contains avocado, it is best to enjoy right away. The lemon juice does keep the avocado from browning, so if you plan on eating the salad later on in the day, cover with plastic wrap and refrigerate until ready to serve. This recipe makes enough salad to serve of 3-4 people, and it can easily be doubled to accommodate more guests. My husband and I love this salad so much that we can both eat it for dinner along with a lighter meal.

Ingredients
  • 1 avocado
  • 6 oz grape tomatoes (half of a pack)
  • ½ ball of fresh mozzarella (4 oz)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon green onion, chopped
  • ½ teaspoon salt (add more if needed)
  • ¼ teaspoon pepper
Instructions
  1. Cube the mozzarella and avocados.
  2. Slice each grape tomato in half.
  3. Chop the green onion, dill, and parsley.
  4. Juice half of a lemon.
  5. Place all of the ingredients in a medium bowl and gently mix to combine.
